Column widths in different spreadsheets with the same width don't appear the same base on the text in each. Is it possible the scale of the sheet or width changed?

you can just select all the columns at once and set their width

by selecting the column and right clicking on it you can specify the width

The issue is when I copy information from one spreadsheet to another and adjust the column widths to match, the text doesn't fit in the column where I copied the text to.

It's like the scale is not the same between the two spreadsheets.

if the text is long it would not adjust with in the width

may be font size by default is different in both the sheets

or you might be viewing one sheet at below 100% zoom

My Excel says the default is Body Font.
